Well … a lower quality vegetable madras would have frozen vegetables - diced carrot, sweetcorn, green beans and so on. In my experience most vegetable madrases(?) and other vegetable curry dishes tend to be like this. The higher quality ones would have fresh vegetables. Maybe potato, peas, carrot, cauliflower … The one I had today was the latter kind. Although there was no sprinkling of coriander, or tomato and cucumber slice garnish. |
