Big pot of turkey-chilli-con-cranky on the go. We're having nachos for dinner.
The child had 'International Day' at school the other week where they served "Nachos" as one of the options for lunch. Having not learned her lesson from the bollocks school Xmas dinner debacle, she chose this. It wasn't very good, so I promised her home made.
We've got homemade guac & salsa, soured cream. She has some smashed avacado.
The only downside is I'm now being harassed to get it out (easy now Tuffers) as the child now has a Roblox game set up after dinner with her pal in Seattle.

I think … with guacamole the more you put in the worse it is …
Avocado Salt Peeled, deseeded, chopped tomato Coriander Lime juice …
Onions, garlic and chilli, although nice, will put a guacamole in jeopardy.

I have returned triumphantly from my hunter-gatherer expedition to Morrisons.
Now about to make Kashmiri chicken. Not many ingredients but it's tremendous. The recipe is from a really old book from the 80s, funnily enough called 'Indian Cooking' by Naomi Good, Chancellor Press. A simpler time..
Butter Onions Cardamom pods Cinnamon stick Black peppercorns Garlic ginger Chicken breasts Paprika Chilli powder Yogurt Salt
Served with uncle Ben's rice.

The Lazybones recipe for guacamole is all you need, he is correct.
The salsa was the same tomato from the guac but more of it. Finely chopped shallot, finely chopped coriander, lime juice. Bootiful.
The nachos were scoffed good and proper and there is a 3 portion & 2 portion of chilli for the freezer.
Beers in the fridge and trying to have the willpower not to eat my last chew later. More games, more TV.

Good to see them travelling. in a past life I dabbled with a pro fireworks team, and St Peter’s was a regular wedding venue we’d do shows for. Due to the surrounding cornfields we were obliged to make the area safe before firing, and regularly had to turf out randy guests who’d popped out for a quickie in the field, not realising it was our drop zone, before we could start the show.

I rarely cooked food from scratch (tending to adapt using Patak's sauces with a base of onions, ginger and chilli, frying off the meat in batches and adding tomatoes and deglazing the pan - having done that add the 'meat' and Patak's, brought it to the bubble on the hob for lowest heat for 15m. 2h before you want to serve it put it in the oven having covered and stirred the gorgeous mess. Check and stir every 30m and serve with basmati rice and whatever sides you want)! Nish's Chicken recipe looks cracking!
